Salami And Ricotta Pizzas
- 2 x 12 inch pizza crusts
- 1 x 14 oz can crushed tomatoes
- 1 tsp brown sugar
- 12 oz mozzarella, shredded
- 3.5 oz pitted kalamata olives, sliced
- 2 None Japanese eggplants, thinly sliced diagonally
- 5.25 oz mild salami, thinly sliced
- 9 oz ricotta
- 1/3 cup basil leaves
- 7 oz mixed salad greens, to serve
- Preheat oven to 450u0b0F. Place pizza crusts on 2 large baking sheets. Combine tomatoes and sugar in a small bowl. Stir to dissolve sugar. Spoon tomato mixture evenly over crusts, crushing lightly with the back of a spoon.
- Sprinkle crusts with half the cheese, then top with olives, eggplant, and remaining cheese. Add salami and bake for 10 mins.
- Sprinkle with ricotta. Bake for 2-3 mins more or until ricotta is just heated. Remove pizzas from oven. Sprinkle with basil and pepper. Serve with salad.
