Coconut, Lime And Passionfruit Syrup Cakes

  1. Preheat oven to 350u0b0F. Lightly grease 8 mini loaf pans.
  2. In a large bowl, combine flour, coconut and sugar. Add butter, milk, eggs, passionfruit pulp and lime zest and mix until combined. Transfer to prepared pans and bake for 15-20 mins, until golden brown and a skewer inserted in the center comes out clean. Transfer to a wire rack.
  3. Meanwhile, to make the lime and passionfruit syrup, combine all ingredients in a small saucepan with 1/2 cup water. Stir over low heat until sugar dissolves. Bring to a boil then reduce heat to medium and simmer for 5-10 mins, until thickened slightly. Drizzle over cakes. Serve with cream.
