Coconut, Lime And Passionfruit Syrup Cakes
- 1 cup self-rising flour, sifted
- 1 cup shredded coconut
- 1 cup granulated sugar
- 1/2 cup butter, melted
- 1/2 cup milk
- 2 None eggs, lightly beaten
- 2 None passionfruit, pulp scooped out
- 2 tbsp lime, zested
- None None Lime and Passionfruit Syrup
- 3/4 cup granulated sugar
- 4 None passion fruit, pulp scooped out
- 1/3 cup lime juice
- 1 tbsp lime zest
- None None heavy cream, to serve
- Preheat oven to 350u0b0F. Lightly grease 8 mini loaf pans.
- In a large bowl, combine flour, coconut and sugar. Add butter, milk, eggs, passionfruit pulp and lime zest and mix until combined. Transfer to prepared pans and bake for 15-20 mins, until golden brown and a skewer inserted in the center comes out clean. Transfer to a wire rack.
- Meanwhile, to make the lime and passionfruit syrup, combine all ingredients in a small saucepan with 1/2 cup water. Stir over low heat until sugar dissolves. Bring to a boil then reduce heat to medium and simmer for 5-10 mins, until thickened slightly. Drizzle over cakes. Serve with cream.
