Curried Beef And Pea Pie
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, crushed
- 1 1/3 lbs ground beef
- 2 tbsp curry powder, plus additional, for sprinkling
- 2 tbsp flour
- 2 tbsp tomato paste
- 2 cups beef stock
- 3/4 cup frozen peas
- 1 sheet frozen puff pastry, thawed
- 1 None egg, lightly beaten
- Preheat the oven to 425u0b0F. Grease a 1 1/2-quart baking dish.
- Heat oil in large saucepan on medium-high heat. Cook onion and garlic, stirring, until onion is softened. Add ground beef; cook, stirring, until browned.
- Add curry powder; cook, stirring, until fragrant. Add flour; cook, stirring, until mixture bubbles and thickens. Add tomato paste; gradually stir in stock. Stir until mixture boils and thickens. Reduce heat to low; simmer, uncovered, for 10 mins. Stir in peas; season to taste.
- Pour mixture into prepared dish. Top with pastry; trim edge. Brush with egg; sprinkle with a little additional curry powder.
- Bake for 20 mins, or until pastry is puffed and lightly browned.
