Curried Beef And Pea Pie

  1. Preheat the oven to 425u0b0F. Grease a 1 1/2-quart baking dish.
  2. Heat oil in large saucepan on medium-high heat. Cook onion and garlic, stirring, until onion is softened. Add ground beef; cook, stirring, until browned.
  3. Add curry powder; cook, stirring, until fragrant. Add flour; cook, stirring, until mixture bubbles and thickens. Add tomato paste; gradually stir in stock. Stir until mixture boils and thickens. Reduce heat to low; simmer, uncovered, for 10 mins. Stir in peas; season to taste.
  4. Pour mixture into prepared dish. Top with pastry; trim edge. Brush with egg; sprinkle with a little additional curry powder.
  5. Bake for 20 mins, or until pastry is puffed and lightly browned.
