Chocolate Cherry Bars

  1. Preheat oven to 350u0b0F. Lightly grease and line a 12x8 inch cake pan.
  2. Heat chocolate and butter in a saucepan over low heat, stirring, for 3-4 mins, until smooth and combined. Let cool for 10 mins then whisk in eggs. Add brown sugar, flour and coconut. Fold in 1/2 the chocolate chips. Transfer to prepared pan.
  3. Push cherries into batter and sprinkle with remaining chocolate chips. Bake for 30-35 mins, until firm. Let cool in pan for 10 mins then turn out onto a wire rack to cool completely. Cut into pieces and sprinkle with extra coconut to serve.
