Mediterranean Stew With Basil Dumplings

  1. Heat olive oil in a Dutch oven. Cook sausages for 8-10 mins. Set aside. Add onion, peppers and celery. Cook for 8 mins. Cut sausages into chunks then return to pan along with olives and all-purpose flour. Whisk together tomato paste, stock and wine then add to vegetables. Boil until sauce thickens.
  2. Meanwhile, for the dumplings, combine self-rising flour with 1/2 tsp salt in a bowl. Add butter, basil and 6 tbsp water and mix until smooth. With lightly floured hands, roll into 12 balls. Place over vegetables in Dutch oven. Reduce heat, cover and simmer for 15-20 mins, until dumplings are firm to the touch.
