Mediterranean Stew With Basil Dumplings
- 2 tbsp olive oil
- 1 lb pork sausages
- 1 None red onion, cut into wedges
- 3 None bell peppers, seeded, cut into chunks
- 4 stalks celery, cut into chunks
- 3.5 oz black olives
- 3 tbsp all-purpose flour
- 4 tbsp sun-dried tomato paste
- 2 1/2 cups vegetable stock
- 2/3 cup red wine
- 3/4 cup self-rising flour
- 3 1/2 tbsp grated frozen butter
- 2 tbsp fresh basil leaves, chopped
- Heat olive oil in a Dutch oven. Cook sausages for 8-10 mins. Set aside. Add onion, peppers and celery. Cook for 8 mins. Cut sausages into chunks then return to pan along with olives and all-purpose flour. Whisk together tomato paste, stock and wine then add to vegetables. Boil until sauce thickens.
- Meanwhile, for the dumplings, combine self-rising flour with 1/2 tsp salt in a bowl. Add butter, basil and 6 tbsp water and mix until smooth. With lightly floured hands, roll into 12 balls. Place over vegetables in Dutch oven. Reduce heat, cover and simmer for 15-20 mins, until dumplings are firm to the touch.
