Buckwheat Blinis With Smoked Salmon

  1. Sift flours, baking powder and salt into a medium bowl. Whisk milk, egg, 2 tbsp of the butter and snipped dill in a small bowl. Add to dry ingredients, whisking until smooth.
  2. Heat a large skillet on medium heat and brush with a little of the remaining butter. Cook tablespoons of batter, in batches, for 1-2 mins each side, until golden.
  3. Top warm blinis with sour cream, smoked salmon, a grinding of pepper and a dill sprig. Serve with lemon wedges.
