Lemon Meringue Kisses

  1. For the lemon curd, combine butter, egg, 1/4 cup of the granulated sugar, lemon peel and 2 tbsp lemon juice in small, heatproof bowl. Stir over a small saucepan of simmering water for 10 mins, or until mixture coats the back of a spoon. Refrigerate for 3 hours or overnight.
  2. Preheat the oven to 250u0b0F. Grease 2 baking pans and line with parchment paper.
  3. For the meringues, beat egg whites and remaining 1/2 cup sugar and 1 tsp lemon juice in a medium bowl with electric mixer for 15 mins, or until sugar has dissolved.
  4. Spoon mixture into piping bag fitted with 3/4-inch star tip. Pipe 1 1/2-inch stars onto prepared pans, placing then 1 inch apart.
  5. Bake for 1 hour. Cool completely on pans on wire rack.
  6. Sandwich meringues with lemon curd and dust with sifted powdered sugar before serving, if desired.
