Flounder With Dill
- 4 small unpeeled tomatoes, each cut into 4 (1/4-inch thick) slices
- vegetable cooking spray
- 4 (4 oz.) flounder fillets
- 1/4 c. fine dry bread crumbs
- 1 Tbsp. grated Parmesan cheese
- 1 1/2 tsp. chopped fresh dill
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 1/8 tsp. ground red pepper
- 1 Tbsp. margarine, melted
- fresh dill sprigs (optional)
- Place tomato slices in a 13 x 9 x 2-inch baking dish coated with cooking spray. Arrange fillets on top of tomatoes.
- Combine bread crumbs and next 5 ingredients in a bowl.
- Stir in margarine. Sprinkle evenly over fillets.
- Bake at 425u0b0 for 13 minutes or until fish flakes easily when tested with a fork.
- Garnish with fresh dill, if desired.
