Strawberry Vanilla Cupcakes

  1. Preheat oven to 375u0b0F. Line a 12-cup muffin pan with paper liners. For the batter, cream butter and sugar together with an electric mixer, until pale. Add eggs, one at a time, beating well after each addition. Add vanilla extract and mix until combined. Fold in flour and milk alternately. Spoon into prepared liners and bake 15-20 mins, until a skewer comes out clean. Cool on a wire rack.
  2. To serve, top each cupcake with whipped cream and strawberries and dust with powdered sugar.
