Strawberry Vanilla Cupcakes
- 9 tbsp unsalted butter, at room temperature
- 3/4 cup sugar
- 2 None large eggs
- 1 tsp vanilla extract
- 1 1/3 cup self-rising flour, sifted
- 1/2 cup low-fat milk
- 1 1/2 cups cream, whipped
- 1 lb strawberries, hulled, halved
- None None powdered sugar, for dusting
- Preheat oven to 375u0b0F. Line a 12-cup muffin pan with paper liners. For the batter, cream butter and sugar together with an electric mixer, until pale. Add eggs, one at a time, beating well after each addition. Add vanilla extract and mix until combined. Fold in flour and milk alternately. Spoon into prepared liners and bake 15-20 mins, until a skewer comes out clean. Cool on a wire rack.
- To serve, top each cupcake with whipped cream and strawberries and dust with powdered sugar.
