Sesame Chicken Schnitzel
- 4 None chicken breast fillets, pounded thin
- 1 1/2 cups fresh breadcrumbs
- 1/4 cup sesame seeds
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley leaves
- 1/2 cup all-purpose flour, for dusting
- 2 None large eggs, lightly beaten
- 2 tbsp olive oil
- 4 None potatoes, chopped, par-boiled
- 1 None red onion, finely sliced
- Preheat oven to 350u0b0F. Line a baking tray with parchment paper.
- Combine breadcrumbs, sesame seeds, Parmesan and parsley in a shallow dish. Dust each chicken breast with flour, dip into egg then coat in breadcrumb mixture. Place on prepared tray, cover and chill for 20 mins.
- Bake chicken for 30-35 mins, until golden and cooked through.
- Meanwhile, heat olive oil in a frying pan over medium heat. Cook potatoes for 3-5 mins, until starting to brown. Add red onion and cook for another 3-5 mins, until potatoes are golden and onion is soft. Season to taste. Serve with chicken schnitzel.
