Sesame Chicken Schnitzel

  1. Preheat oven to 350u0b0F. Line a baking tray with parchment paper.
  2. Combine breadcrumbs, sesame seeds, Parmesan and parsley in a shallow dish. Dust each chicken breast with flour, dip into egg then coat in breadcrumb mixture. Place on prepared tray, cover and chill for 20 mins.
  3. Bake chicken for 30-35 mins, until golden and cooked through.
  4. Meanwhile, heat olive oil in a frying pan over medium heat. Cook potatoes for 3-5 mins, until starting to brown. Add red onion and cook for another 3-5 mins, until potatoes are golden and onion is soft. Season to taste. Serve with chicken schnitzel.
