Country Chicken And Vegetables With Pepper Sauce
- 1 lb new potatoes, halved
- 1 None small sweet potato, peeled, chopped
- 2 None small leeks, trimmed, washed, sliced
- 1 bulb garlic, cloves separated
- 1 bunch fresh thyme
- 1/2 cup chicken stock
- 1/2 cup white wine
- 4 1/4 lb whole chicken, cleaned, dried, skin removed, quartered
- None None Pepper Sauce
- 1 tbsp olive oil
- 1 None onion, chopped
- 2 cloves garlic, crushed
- 1 (10 oz) jar char-grilled peppers, drained, chopped
- 1/4 cup tomato puree
- Preheat oven to 350u0b0F.
- Arrange potatoes, sweet potato, leek, garlic cloves and thyme sprigs in a large baking dish. Add stock and wine and bake for 20 mins. Arrange chicken over top and bake for 25-30 mins, basting occasionally. Stir vegetables then bake for another 10-15 mins, until chicken is cooked through. Season.
- Meanwhile, for the pepper sauce, heat oil over high heat. Saute onion and garlic for 2-3 mins, until tender. Add remaining ingredients then puree until smooth. Season.
- Serve chicken and vegetables with pepper sauce.
