Soy Pork Skewers With Vegetable Rice
- 1 lb boneless pork chops, cut into 1 inch pieces
- 1 lb pineapple, peeled, cut into 3/4 inch pieces
- 1 medium red pepper, cut into 3/4 inch pieces
- 2 None green onions, cut into 1 inch lengths
- 1/4 cup light soy sauce
- 1 1/2 tbsp brown sugar
- None None Lemon wedges, to serve
- None None FOR THE VEGETABLE RICE
- 2 tbsp vegetable oil
- 1 cup frozen mixed vegetables
- 5 cups cold cooked long-grain rice
- 3 tbsp light soy sauce, to taste
- Soak 8 wooden skewers in water for 20 mins. Thread pork, pineapple, red pepper and onion onto skewers. Place in a glass dish. Combine soy sauce and sugar in a small bowl. Pour over skewers, turning to coat. Cover with plastic wrap; refrigerate for 15 mins.
- Meanwhile, for the rice, heat a wok on medium-high heat. Add oil; swirl to coat bottom and sides. Stir-fry vegetables for 4 mins, or until heated through. Add rice and stir-fry for 3 mins, or until heated through. Add soy sauce to taste.
- Heat a large skillet or grill pan on medium heat. Spray skewers with no stick cooking spray. Cook and turn skewers in batches for 5 mins each batch, or until browned and cooked. Spoon rice onto plates. Serve with skewers and lemon wedges.
