Spicy Lamb And Spinach Pide Bread
- 1/3 cup all-purpose flour
- 2 tsp instant yeast
- 1 tbsp vegetable or olive oil
- 2 None spicy lamb sausages, casings removed
- 10 cups spinach, shredded
- 3 tbsp mozzarella cheese, grated
- 2 oz haloumi cheese, finely chopped
- 1 None egg, lightly whisked
- None None lemon wedges, to serve
- Combine flour, yeast and 1 tsp salt. Using a wooden spoon, stir in 1 cup warm water and oil until combined and sticky. Turn out onto a lightly floured surface and knead for 10 mins, or until soft and smooth. Transfer to a lightly greased bowl, cover and set aside in a warm place for 1 hour, or until doubled in size.
- Meanwhile, heat a frying pan over high heat. Add sausage and cook for 5 mins, or until browned and cooked through. Remove from heat. Add spinach and stir until wilted. Let cool then add mozzarella and haloumi. Season.
- Preheat a gas grill. Punch dough down then divide into 4 portions. Roll out each piece on a lightly floured surface into a 12x6 inch rectangle. Top with spinach mixture, leaving a 3/4 inch border. Fold in sides to partially cover filling then pinch and fold sides of dough to seal. Place on a large greased baking tray. Brush dough with egg.
- Turn off center burners, leaving side burners on. Transfer baking tray to center of grill and cook, covered, for 10-12 mins, or until pide is golden and base is crisp. Serve with lemon wedges.
