Falafel Sandwiches With Cabbage Salad
- 1/2 None large tomato, chopped coarsely
- 2 tbsp coarsely chopped fresh flat-leaf parsley leaves
- 1/2 None small Persian cucumber, chopped coarsely
- 1 None large spring onion, chopped coarsely
- 1/3 lb red cabbage, shredded
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 6 None prepared mini falafel balls
- 2 None small pita breads
- 1/2 cup baba ghanoush
- 8 None small pickled chili peppers, drained (optional)
- For the salad, combine tomato, parsley, cucumber, spring onion, cabbage and combined oil and lemon juice in a medium bowl. Season to taste.
- Heat falafel in microwave 1 min on high, or until heated through. Break up with a fork.
- To assemble, cut pita in half. Spread with baba ghanoush. Fill with falafel, salad and peppers, if using. Serve immediately.
