Falafel Sandwiches With Cabbage Salad

  1. For the salad, combine tomato, parsley, cucumber, spring onion, cabbage and combined oil and lemon juice in a medium bowl. Season to taste.
  2. Heat falafel in microwave 1 min on high, or until heated through. Break up with a fork.
  3. To assemble, cut pita in half. Spread with baba ghanoush. Fill with falafel, salad and peppers, if using. Serve immediately.
