Rhubarb, Pear And Apple Crumble
- 10.5 oz rhubarb, trimmed, chopped
- 2 None apples, peeled, cored, thinly sliced
- 2 None pears, peeled, cored, thinly sliced
- 1/4 cup brown sugar
- None None ice cream, to serve
- -1 None Crumble
- 1/2 cup all-purpose flour
- 1 tsp ground cinnamon
- 4 1/2 tbsp cold butter, chopped
- 1/2 cup rolled oats
- 2/3 cup macadamia nuts, chopped
- 1/3 cup shredded coconut
- Preheat oven to 350u0b0F. Lightly grease 6 - 8 oz ramekins.
- In a large saucepan, combine rhubarb, apples, pears, sugar and 2 tbsp water. Bring to a boil then reduce heat and simmer, stirring occasionally, for 8-10 mins, until tender. Distribute between ramekins.
- To make the crumble, sift flour and cinnamon into a large bowl. Cut in butter until mixture resembles breadcrumbs. Stir in oats, macadamia nuts, coconut and sugar. Sprinkle over fruit mixture in ramekins and bake for 15-20 mins, until golden brown.
- Serve crumbles warm with ice cream.
