Rhubarb, Pear And Apple Crumble

  1. Preheat oven to 350u0b0F. Lightly grease 6 - 8 oz ramekins.
  2. In a large saucepan, combine rhubarb, apples, pears, sugar and 2 tbsp water. Bring to a boil then reduce heat and simmer, stirring occasionally, for 8-10 mins, until tender. Distribute between ramekins.
  3. To make the crumble, sift flour and cinnamon into a large bowl. Cut in butter until mixture resembles breadcrumbs. Stir in oats, macadamia nuts, coconut and sugar. Sprinkle over fruit mixture in ramekins and bake for 15-20 mins, until golden brown.
  4. Serve crumbles warm with ice cream.
