Tropical Fruit Cakes

  1. Preheat oven to 350u0b0F. Grease and line 3 foil loaf pans with parchment paper.
  2. Sift together flour, baking soda, spices and sugar. Mix in coconut, pineapple, banana, eggs and oil until combined. Distribute between prepared pans and bake for around 45 mins, until a skewer inserted in the center comes out clean. Let cool in pans on a wire rack.
  3. Meanwhile, to make the lemon icing, combine all ingredients. Heat over a double boiler until fluid and pourable.
  4. Drizzle lemon icing over cooled cakes and decorate with walnut halves.
