Breaded Pork Chops With Garlic Mayo And Smashed Potatoes
- 1 1/4 lb baby new potatoes
- 4 cloves garlic, unpeeled
- 3 tbsp fresh parsley leaves, finely chopped
- 1/4 cup fresh chives, finely chopped
- 4 None boneless pork chops, halved, pounded thin
- 1/3 cup all-purpose flour, seasoned
- 2 None eggs, lightly beaten
- 1 1/4 cups fresh breadcrumbs
- None None vegetable oil, to shallow-fry
- 1/2 cup mayonnaise
- Preheat oven to 400u0b0F.
- Cook potatoes in boiling, salted water for 8-10 mins, until just tender. Drain. Smash then place on a baking tray along with garlic. Drizzle with oil and season. Bake for 15-20 mins. Toss with herbs then bake for another 5 mins.
- Reduce oven temperature to 300u0b0F. Dredge pork chops in flour, shaking off excess. Dip in egg then coat with breadcrumbs. Chill for 10 mins.
- Heat oil in a frying pan over high heat. Fry pork for 2-3 mins per side, until golden and cooked through. Drain on paper towels. Keep warm in oven.
- Peel garlic. Mash with mayonnaise and season.
- Serve chops with garlic mayonnaise and smashed potatoes.
