Spinach And Sage Lasagne

  1. Preheat oven to 350u0b0F. Blanch spinach in boiling water, drain and leave to cool, then coarsely chop the spinach.
  2. Heat 2 tbsp oil and saute two-thirds of the shallots. Add garlic and spinach and saute briefly. Season with salt, pepper and nutmeg and set aside. Saute remaining shallots in 2 tbsp oil. Add cream and remove from heat. Stir in sage and half the Parmesan, and season.
  3. Grease a baking dish and layer sheets of lasagne alternately with the spinach and the sage sauce. Finish with a sheet of lasagne. Spread with remaining sauce and sprinkle with Parmesan. Bake for 40 mins.
