Spinach And Sage Lasagne
- 2 1/4 lbs spinach, washed
- 6 None shallots, peeled and finely diced
- 2 cloves garlic, peeled and finely chopped
- 1/4 tsp grated nutmeg
- 4 tbsp olive oil
- 1 2/3 cups heavy cream
- 1/2 bunch sage, finely chopped
- 7 oz Parmesan, grated
- 8 sheets lasagne
- Preheat oven to 350u0b0F. Blanch spinach in boiling water, drain and leave to cool, then coarsely chop the spinach.
- Heat 2 tbsp oil and saute two-thirds of the shallots. Add garlic and spinach and saute briefly. Season with salt, pepper and nutmeg and set aside. Saute remaining shallots in 2 tbsp oil. Add cream and remove from heat. Stir in sage and half the Parmesan, and season.
- Grease a baking dish and layer sheets of lasagne alternately with the spinach and the sage sauce. Finish with a sheet of lasagne. Spread with remaining sauce and sprinkle with Parmesan. Bake for 40 mins.
