Basic Ham And Cheese Quiche

  1. Lightly grease a 9-inch tart pan with removable bottom. Place on a baking pan.
  2. Sift flour into a large bowl. Add butter. Rub in using fingertips, until mixture resembles breadcrumbs. Add yolk and enough ice-cold water (about 1 tbsp) to make a firm, but pliable dough. Knead lightly into a ball. Wrap in plastic wrap. Refrigerate 30 mins.
  3. Preheat the oven to 400u0b0F. Roll pastry between 2 sheets of parchment paper until large enough to fit prepared pan. Press into pan; trim edges. Refrigerate 15 mins. Line crust with parchment paper and fill with baking beans. Bake 15 mins. Remove paper and filling. Bake further 10 mins, until lightly golden. Cool. Reduce oven temperature to 350u0b0F.
  4. Heat oil and butter in a large skillet on medium heat. Saute onion 4-5 mins, until it begins to caramelize. Cool slightly. Sprinkle onion, ham and cheese evenly over crust.
  5. Whisk cream, milk and eggs in a large bowl. Season to taste. Carefully pour into crust.
  6. Bake 35-40 mins until set. Serve quiche hot or at room temperature with salad, if desired.
