Indian Beef And Green Bean Curry

  1. Combine curry paste and mustard seeds in a large frying pan. Cook over medium heat, stirring, for 1 min, until fragrant. Add ground beef and brown for 2-3 mins. Add tomatoes and green beans. Bring to a boil then reduce heat and simmer for 2-3 mins.
  2. Meanwhile, to make the salad, arrange pappadums in single layer on a serving plate. Microwave on HIGH (100% power) for 40 seconds-1 min, until puffed and golden. In a medium bowl, toss together carrots, orange, mint and currants. Crumble pappadums over top when ready to serve.
  3. Serve curry with salad and rice.
