Herb Crusted Salmon With Linguine

  1. Combine chopped herbs, garlic and Parmesan with breadcrumbs and season. Set aside 1 tbsp of the mixture. Sprinkle the flour on a plate. Whisk eggs in a deep dish.
  2. Dredge the salmon fillets one at a time in the in the flour, then the eggs and then the breadcrumbs. Heat the butter and 2 tbsp oil in a large nonstick frying pan. Cook the fillets over a low heat for 4-5 mins on each side, until cooked through.
  3. Meanwhile, cook linguine in boiling salted water according to directions on package. Drain. Mix with remaining herbed breadcrumbs and 2 tbsp oil.
  4. Serve salmon and linguine with a garnish of sliced lemon.
