Bacon And Cabbage Pasta
- 40 g butter
- 4 None rashers, thick cut bacon, cut into strips
- 2 None onions, peeled and finely chopped
- 4 tbsp caster sugar
- 800 g cabbage, cored and chopped
- 4 tbsp white wine vinegar
- 100 ml beef stock
- 2-3 None bay leaves
- 1/2 tsp allspice
- None None cress, to garnish
- Heat the butter in a large, deep, lidded frying pan. Add the bacon and cook for 3-4 mins. Remove from the pan with a slotted spoon and drain on paper towels. Add the onions to the pan, sprinkle with the sugar and cook for 3-5 mins to caramelize. Add the cabbage and stir-fry for 2-3 mins. Add 1/2 cup water along with the vinegar, stock, bay leaves, allspice and the cooked bacon. Cook over medium heat, covered, for 30-40 mins, stirring frequently.
- Meanwhile, cook the pasta in boiling, salted water according to the package instructions. Drain and stir in the cabbage broth just before serving. Divide between 4 bowls and garnish with the watercress.
