Easy Fish And Chips
- 1 pkg (26 oz) frozen French fries
- 1 1/2 cups panko breadcrumbs
- 1/4 cup chopped flat-leaf parsley
- 1 1/2 tbsp finely grated lemon peel
- 1/3 cup milk
- 1 None egg
- 4 None firm white fish fillets (5 oz each), cut in half lengthwise
- 1/2 cup mayonnaise
- 1 tbsp baby salted capers, rinsed and chopped
- None None Mixed salad, to serve
- Preheat the oven to 425u0b0F. Place French fries in a single layer on a large baking pan. Bake according to package directions or until golden brown and crisp.
- Meanwhile, combine breadcrumbs, 2 tbsp of the parsley and 1 tbsp of the lemon peel in bowl. Whisk milk and egg in a separate bowl. Dip fish in milk, then breadcrumbs, and coat evenly. Place on a baking pan. Spray with no stick cooking spray.
- Bake for 8-10 mins or until golden and cooked through.
- Whisk mayonnaise, remaining 2 tbsp parsley, remaining 1/2 tbsp lemon peel and capers in a small bowl. Serve fish and chips with caper mayonnaise and salad.
