Roasted Squash And Feta Pasta
- 2 1/4 lb winter squash, roughly chopped
- 2 tsp caraway seeds
- 1/3 cup olive oil
- 13.5 oz linguine
- 1/3 cup pine nuts, toasted
- 2 tbsp roughly chopped fresh flat-leaf parsley leaves
- 7 oz feta cheese, crumbled
- 1/4 cup lemon juice
- 1 clove garlic, minced
- 2 tbsp white wine vinegar
- Preheat oven to 475u0b0F.
- Place squash, caraway seeds and 2 tbsp oil in a large, shallow roasting pan and toss to combine. Roast for 20 mins, or until squash is tender.
- Meanwhile, cook pasta in boiling salted water until al dente then drain.
- Transfer pasta and squash mixture to a large serving bowl. Add pine nuts, parsley and cheese. Drizzle with lemon juice, garlic, vinegar and remaining oil. Toss gently to combine.
