Beef And Mushroom Stew
- 1 tbsp oil
- 1 lb beef, cut into strips
- 1 None onion, peeled and sliced
- 10.5 oz crimini mushrooms, thickly sliced
- 1 tbsp smoked paprika
- 3 None medium potatoes, peeled and cut into cubes
- 2 cups beef stock
- 1 cup tomato puree
- None None Parsley, chopped, to serve
- Heat half of the oil in a large saucepan over a high heat. Mix the beef and onion together in a bowl, then cook the combined beef and onion in 2 batches for 2 mins, until browned. Remove from the pan.
- Heat the remaining oil in the same pan over a medium heat. Cook the mushrooms for 2 mins, until golden. Add the paprika with 2 tablespoons of water and cook for 30 seconds, until fragrant.
- Add the potato, stock and tomato puree. Cover and simmer for 10 mins, then uncover and simmer for another 5 mins, until the potato is tender.
- Add the beef and onion and simmer for 1 min. Serve topped with parsley.
