Beef And Mushroom Stew

  1. Heat half of the oil in a large saucepan over a high heat. Mix the beef and onion together in a bowl, then cook the combined beef and onion in 2 batches for 2 mins, until browned. Remove from the pan.
  2. Heat the remaining oil in the same pan over a medium heat. Cook the mushrooms for 2 mins, until golden. Add the paprika with 2 tablespoons of water and cook for 30 seconds, until fragrant.
  3. Add the potato, stock and tomato puree. Cover and simmer for 10 mins, then uncover and simmer for another 5 mins, until the potato is tender.
  4. Add the beef and onion and simmer for 1 min. Serve topped with parsley.
