Steak Salad
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 clove garlic, minced
- 4 (3.5 oz) minute steaks
- 1 (13.5 oz) can red kidney beans, drained, rinsed
- 1 (13.5 oz) can sweet corn, drained, rinsed
- 1 None red bell pepper, deseeded, chopped
- 1 bunch radishes, trimmed, thinly sliced
- 1 cup fresh cilantro leaves
- None None tortillas, to serve
- Combine 1 tbsp oil, 1 tbsp lime juice and garlic. Rub over steaks. Set aside to marinate.
- Meanwhile, combine beans, corn, pepper, radish and cilantro. Combine remaining oil and juice and toss with salad mixture. Season to taste. Set aside.
- Heat a grill pan over high heat. Sear steaks for 1 min per side. Season to taste. Let rest for 2 mins then slice and arrange over salad. Serve with tortillas.
