Muesli Raspberry Muffins
- 2 1/2 cups self-rising flour, sifted
- 5 oz frozen raspberries (or other fruit of choice)
- 1/3 cup brown sugar
- 5 oz toasted muesli
- 1 cup milk
- 2 None large ggs, lightly beaten
- 1/4 cup canola oil
- None None Honey, to drizzle
- Preheat oven to 350u0b0F. Line a 12-hole muffin pan with paper liners.
- Sift flour into a large bowl. Stir in fruit, brown sugar and 1/2 of the muesli.
- In a separate bowl, whisk milk, eggs and oil together. Stir into flour mixture until just combined.
- Spoon evenly between paper liners. Sprinkle with remaining muesli.
- Bake for 20-25 minutes, until a skewer inserted in the center comes out clean. Cool in a pan for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container. Drizzle with honey to serve.
