Cheesy-Baked Pork Rolls, Creamed Spinach And Mashed Potatoes
- 2 1/4 lb potatoes, peeled and cut into large pieces
- 2 tbsp butter
- 1 cup milk
- 1 pinch grated nutmeg
- 2 tbsp oil
- 2 None onions, finely diced
- 2 cloves garlic, minced
- 1 lb frozen spinach
- 1/2 cup vegetable stock
- 4 None small boneless pork chops, pounded thin
- 1/2 lb Camembert cheese, sliced
- 1/2 cup heavy cream
- None None watercress, to garnish
- For the mashed potatoes, cook the potatoes in boiling salted water for 15-20 mins, until tender. Drain, return to the pot and let steam for 1-2 mins. Season and the butter, milk and nutmeg then mash until smooth. Set aside and keep warm.
- For the creamed spinach, heat 1 tbsp oil in a saucepan and saute the onion and garlic for 3-4 mins. Add the spinach and stock and simmer for 8-10 mins until the spinach has wilted. Set aside and keep warm.
- For the pork chops, preheat the oven to 400u0b0F. Roll up each piece of pork and tie using butcher's twine. Heat 1 tbsp oil in a large frying pan, season the meat then sear on all sides over high heat for 3-4 mins. Place on a baking sheet and bake for 3-4 mins. Place the sliced cheese on top of the pork and continue to bake for another 3-4 mins until just melted.
- To finish, mix the cream into the spinach and season. Divide the spinach, potatoes and pork between 4 plates and garnish with watercress. Serve.
