Sirloin Strips With Honey And Ginger
- 1 tsp honey
- 1 tbsp soy sauce
- 2 tbsp lime juice
- 3 oz very fresh ginger, peeled and cut into thin matchstick strip
- 1 lb beef sirloin steak
- 2 tsp sesame oil
- None None Small sprigs of cilantro, or cilantro flowers
- 2 None bird's eye chili peppers, seeded and finely chopped (optional)
- Place the honey, soy sauce and lime juice in a bowl and stir until the honey is dissolved. Add the ginger and stir well. Let stand at room temperature to soften for at least 1 hour.
- Place the beef in a shallow dish and drizzle with oil. Season with freshly ground black pepper and turn the meat gently in the seasoned oil.
- Heat a ridged grill pan on high heat. Add the beef with the fatty side up and cook for 5 mins. Reduce the heat to medium. Turn the beef and cook for 3-4 mins more, depending on the thickness. The beef should be cooked until rare (springy to the touch, but not bouncy). Transfer to a plate. Season generously on both sides and set aside to cool.
- Before serving, slice off the cap of fat from the sirloin along with any underlying gristle. Slice the meat wafer-thin with a thin-bladed sharp knife. Arrange mounds of beef in Chinese spoons or small dishes. Spoon a little marinated ginger over each. Top with a cilantro sprig or flower and a dot or two of chili pepper, if using. Serve immediately.
