Sirloin Strips With Honey And Ginger

  1. Place the honey, soy sauce and lime juice in a bowl and stir until the honey is dissolved. Add the ginger and stir well. Let stand at room temperature to soften for at least 1 hour.
  2. Place the beef in a shallow dish and drizzle with oil. Season with freshly ground black pepper and turn the meat gently in the seasoned oil.
  3. Heat a ridged grill pan on high heat. Add the beef with the fatty side up and cook for 5 mins. Reduce the heat to medium. Turn the beef and cook for 3-4 mins more, depending on the thickness. The beef should be cooked until rare (springy to the touch, but not bouncy). Transfer to a plate. Season generously on both sides and set aside to cool.
  4. Before serving, slice off the cap of fat from the sirloin along with any underlying gristle. Slice the meat wafer-thin with a thin-bladed sharp knife. Arrange mounds of beef in Chinese spoons or small dishes. Spoon a little marinated ginger over each. Top with a cilantro sprig or flower and a dot or two of chili pepper, if using. Serve immediately.
