Veggie Taco Shells

  1. Mix the salsa ingredients in a small bowl. Season generously with salt and freshly ground black pepper. Set aside until required.
  2. For the guacamole, mash the avocado with the lemon juice, chili powder, salt and freshly ground black pepper, until almost smooth and creamy. Transfer to a small serving bowl. Cover with plastic wrap and set aside.
  3. Fill taco shells with refried beans, salsa, guacamole and grated Cheddar cheese.
