Sausage And Rice Noodle Salad
- 7 oz dried large rice stick noodles
- 3 stalks celery, sliced on the diagonal
- 3 None green onions, thinly sliced
- 2 tbsp white wine vinegar
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp grated fresh ginger
- 4 None thin pork sausages
- 1 large red pepper, thinly sliced
- 1/3 cup small basil leaves
- Cook noodles in a large saucepan of boiling water according to package directions. Drain; rinse under cold running water. Drain well. Place in a large serving bowl. Add celery and onion; toss to combine.
- Meanwhile, mix vinegar, soy sauce, sesame oil and ginger in a small bowl.
- Preheat a grill pan on medium-high heat. Add sausages and red pepper; cook for 6-8 mins, turning, until browned and cooked through. Transfer sausages to a cutting board; cut into thick slices on the diagonal. Add sausage, red pepper and dressing to noodle mixture; toss to coat well. Sprinkle with basil. Serve salad warm.
