Tomato, Bean And Cheese Cups
- 12 slices white bread, crusts removed
- 2 tbsp butter, at room temperature
- 3 None eggs
- 1/3 cup milk
- 1/2 tsp dried oregano leaves
- 1/2 cup grated Cheddar cheese
- 1 cup canned baked beans
- 2 medium tomatoes, cut into 12 slices
- None None Mixed green salad, to serve
- Preheat the oven to 350u0b0F. Spray a 12-cup muffin pan with no stick cooking spray.
- Flatten bread slices slightly with a rolling pin. Spread bread with butter. Line prepared muffin cups with bread, butter-side down. Bake for 10 mins or until golden brown.
- Whisk eggs and milk in a medium bowl. Add oregano and cheese. Spoon beans into bread cups. Pour egg mixture over beans. Top each cup with a slice of tomato. Bake for 15-20 mins or until set. Serve with salad.
