Tomato, Bean And Cheese Cups

  1. Preheat the oven to 350u0b0F. Spray a 12-cup muffin pan with no stick cooking spray.
  2. Flatten bread slices slightly with a rolling pin. Spread bread with butter. Line prepared muffin cups with bread, butter-side down. Bake for 10 mins or until golden brown.
  3. Whisk eggs and milk in a medium bowl. Add oregano and cheese. Spoon beans into bread cups. Pour egg mixture over beans. Top each cup with a slice of tomato. Bake for 15-20 mins or until set. Serve with salad.
