Spiced Fig And Orange Cheesecake
- 2/3 cup brazil nuts
- 4 oz graham crackers
- 6 1/2 tbsp butter, melted
- 1 cup orange juice
- 9 oz dried figs, finely chopped
- 1 None cinnamon stick
- 1 pinch ground cloves
- 9 oz cream cheese, softened
- 1 tbsp orange zest
- 3/4 cup granulated sugar
- 9 oz mascarpone cheese
- 2 None eggs, separated
- Preheat oven to 325u0b0F. Grease an 8 inch springform pan.
- Process nuts and graham crackers until fine crumbs form. Add butter and process until combined. Press into base of prepared pan and chill for 30 mins.
- Combine orange juice, figs, cinnamon stick and cloves in a small saucepan. Simmer for 10 mins, or until most juice has been absorbed. Discard cinnamon stick then spread over crumb base.
- Beat cream cheese, orange zest and sugar until smooth. Add mascarpone and egg yolks. Beat until just combined. Whip egg whites to soft peaks then fold in. Pour over fig mixture and bake for 1 hour 15 mins. Let cool in oven with the door ajar. Chill for 3 hours, or overnight.
