Gingerbread Cake

  1. Preheat oven to 300u0b0F. Lightly grease and line an 8x4 inch loaf pan with parchment paper.
  2. In a medium saucepan, combine butter, sugar and honey. Gently heat, stirring, until dissolved. Let cool.
  3. Sift flour, spices, baking powder and baking soda together into a large bowl. Whisk sour cream and eggs into butter mixture then fold into dry ingredients until well combined. Transfer to prepared pan and bake for 1 hour 10 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
  4. Serve sliced with butter.
