Gingerbread Cake
- 1/2 cup butter, chopped, plus extra for serving
- 1/2 cup brown sugar
- 1/2 cup honey
- 1/4 cup gluten-free all-purpose flour
- 3/4 cup rice flour
- 3 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup sour cream
- 2 None eggs
- Preheat oven to 300u0b0F. Lightly grease and line an 8x4 inch loaf pan with parchment paper.
- In a medium saucepan, combine butter, sugar and honey. Gently heat, stirring, until dissolved. Let cool.
- Sift flour, spices, baking powder and baking soda together into a large bowl. Whisk sour cream and eggs into butter mixture then fold into dry ingredients until well combined. Transfer to prepared pan and bake for 1 hour 10 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
- Serve sliced with butter.
