Chocolate Cola Cake

  1. For the batter, melt 8 oz dark chocolate over a double boiler. With an electric mixer, cream 18 tbsp butter, the sugar and a pinch of salt. Beat in eggs one at a time. Stir in the melted chocolate and cocoa powder. Alternately add the flour, baking powder and 2/3 cup cola.
  2. Preheat oven to 350u0b0F. Grease a Bundt pan and dust with flour. Add a layer of batter, then a layer of marshmallows, ensuring marshmallows do not touch edges of pan. Continue layering batter and marshmallows, ending with batter and smoothing top. Bake 45-50 mins, until a toothpick comes out clean. Remove from oven and cool 15 mins. Invert Bundt pan gently onto a cake plate and cool 45 mins.
  3. For the frosting, place remaining butter and cola in a small saucepan and heat until butter is melted. Remove from heat. Add the remaining dark chocolate and the milk chocolate and stir until incorporated. Whisk in the powdered sugar. Spread frosting on cake and chill 30 mins. Slice and serve.
