Sausage And Rosemary Skewers
- 8 sprigs rosemary
- 8 None thick pork sausages
- 3 cloves garlic, crushed
- 2 tbsp vegetable or olive oil
- 2 tsp crushed black pepper
- 1/2 tsp ground cinnamon
- None None Mixed green salad, to serve
- None None Steamed potatoes, to serve
- Trim rosemary leaves from stalks, leaving last 2 inches of leaves attached.
- Place sausages in a large heatproof bowl. Cover with boiling water; stand 10 mins. Drain well.
- When sausages are cool enough, thread onto rosemary stalks. Score sausages 3 times each side, then place in a shallow dish.
- Combine garlic, oil, pepper and cinnamon in a small bowl. Pour oil mixture over sausages; turn to coat. Cover with plastic wrap and chill 30 mins to marinate.
- Preheat a grill or grill pan to moderate. Cook sausages, turning, 6-8 mins, or until browned.
- Serve skewers with green salad and potatoes.
