Grilled Mediterranean Tuna
- 1 1/4 lbs tuna steaks, cut into 1 inch strips
- 6 tbsp olive oil
- 1 None large lemon, finely grated rind and juice
- 1 tbsp white wine vinegar
- 2-3 tsp fresh thyme
- 1 clove garlic, peeled and crushed
- 1 head fennel, cut into thin wedges
- 1 None red onion, sliced
- 4 None tomatoes, thickly sliced
- None None Arugula, to serve
- Place the tuna in a shallow non-metallic dish. Place the olive oil, lemon rind and juice, white wine vinegar, thyme and garlic in a small bowl. Season to taste. Whisk together with a fork to make a dressing. Pour one-third over the tuna. Leave to marinate for 30 mins.
- Heat a grill pan until smoking hot (no need to grease). Add the fennel and onion. Cook for 5-6 mins, turning once, until tender and charred. Transfer to a plate. Cover and keep warm.
- Place the tuna on the hot grill pan. Cook for 2 mins on each side, or according to taste, until just cooked through. Add the tomatoes to the pan for the last 2 mins of cooking. Divide the tuna, tomatoes, fennel and onion between 4 plates. Spoon over the reserved dressing. Serve immediately with arugula.
