One-Pot Tomato And Shrimp Spaghetti
- 3 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, crushed
- 1 None fresh long red chili pepper, finely chopped
- 1 can (14 oz) diced tomatoes
- 1/3 cup basil leaves, coarsely chopped
- 1 pkg (16 oz) spaghetti
- 1 lb medium shrimp, peeled and deveined, tails intact
- 1/4 cup small fresh basil leaves, to sprinkle
- Heat 1 tbsp of the oil in a large saucepan on medium heat. Cook onion, garlic and chili pepper, stirring, for 2-3 mins, or until onion softens. Add tomatoes and basil; cook, stirring, for 1 min.
- Add 4 cups water to the pan; bring to a boil. Add pasta, stirring. Once pasta begins to soften, gently mix into the tomato mixture. Boil, uncovered, stirring, for 5 mins. Add shrimp; boil, uncovered, stirring, for about 5 mins or until pasta is tender and shrimp just change color. Season to taste.
- Serve pasta drizzled with remaining 2 tbsp oil and sprinkled with basil leaves.
