Creamy Bacon And Pea Pasta
- 11 oz large shell pasta
- 5 oz frozen peas
- 4 None eggs, at room temperature
- 6 strips bacon, chopped
- 1/4 cup flat leaf parsley, chopped
- 5 oz feta, crumbled
- 8.75 oz cherry tomatoes, quartered
- 1/2 cup store- bought coleslaw dressing
- Cook pasta according to package instructions, adding peas to water for last 2 mins of cooking time. Drain.
- Meanwhile, place eggs in a saucepan and cover with water. Bring water to a boil. Once the water reaches a boil, remove pan from the heat. Let eggs sit in water 12 minutes, drain, then run under cold water. Peel; cut into quarters.
- Heat a small frying pan over moderately high heat. Add bacon; cook and stir for 5 mins or until crisp.
- Transfer to a large bowl, reserving a few pieces of bacon. Add pasta, peas, parsley, feta, tomatoes and dressing; toss to combine. Serve topped with egg and reserved bacon.
