Creamy Bacon And Pea Pasta

  1. Cook pasta according to package instructions, adding peas to water for last 2 mins of cooking time. Drain.
  2. Meanwhile, place eggs in a saucepan and cover with water. Bring water to a boil. Once the water reaches a boil, remove pan from the heat. Let eggs sit in water 12 minutes, drain, then run under cold water. Peel; cut into quarters.
  3. Heat a small frying pan over moderately high heat. Add bacon; cook and stir for 5 mins or until crisp.
  4. Transfer to a large bowl, reserving a few pieces of bacon. Add pasta, peas, parsley, feta, tomatoes and dressing; toss to combine. Serve topped with egg and reserved bacon.
