Steak Sandwiches With Pepper Relish
- 2 1/2 tbsp butter
- 1 tbsp olive oil, plus extra, for brushing
- 2 None onions, thinly sliced
- 2 None plum tomatoes, thickly sliced
- 4 slices prosciutto
- 4 None thin steaks, trimmed
- 1 None pita bread, cut into 4 pieces, split and toasted
- 2 oz salad greens
- None None Pepper Relish
- 2 None red peppers, deseeded, chopped
- 1 3/4 cups brown sugar
- 1 cup apple cider vinegar
- 1 tbsp grated ginger
- 1 tsp chopped chili pepper (optional)
- 1 clove garlic, crushed
- For the pepper relish, combine all ingredients in a saucepan on medium heat and bring to a boil. Reduce heat to low and simmer 25-30 mins, until reduced by half.
- Meanwhile, heat butter and oil in a frying pan and cook onions on medium 5 mins, until tender and beginning to caramelize. Add tomatoes to pan and cook 1-2 mins each side, until soft. Move to side of pan and add prosciutto. Cook 2-3 mins, until crisp. Remove from heat and keep warm.
- For the steaks, heat a heavy-based frying pan. Brush steaks with olive oil and cook 2 mins, until moisture begins to pool on surface. Flip and cook 1-2 more mins.
- To assemble the sandwiches, layer each piece of pita bread with salad greens, steak, tomatoes, prosciutto and onions. Serve with the pepper relish.
