Baked Potatoes À La Bolognese
- 4 None large baking potatoes
- 1 tbsp olive oil
- 10.5 oz ground beef
- 1/4 lb carrots, finely diced
- 1/4 lb leeks, finely diced
- 1/4 lb celery, finely diced
- 1 None onion, finely diced
- 2 tbsp tomato paste
- 3/4 cup dry red wine
- 1 - 15 oz can chopped tomatoes
- 8 sprigs fresh marjoram, 4 sprigs chopped, 4 sprigs reserved to garnish
- 1/4 lb Gouda cheese, grated
- Cook potatoes in boiling, salted water for 25-30 mins.
- For bolognese sauce, heat oil in a large pan and brown ground beef for 2 mins, stirring. Add diced vegetables and cook for 3 mins. Add tomato paste and cook for 1 min. Add red wine and bring to a boil. Add tomatoes, season to taste and add chopped marjoram.
- Preheat oven to 400u0b0F. Drain potatoes, make a cut along the tops and fill with bolognese sauce. Sprinkle with cheese and bake for about 10 mins. Serve garnished with marjoram.
