Salmon And Mixed Pea Salad
- 1 tbsp olive oil
- 1 1/3 lbs salmon fillets
- 5 oz snow peas, trimmed and blanched
- 5 oz sugar snap peas, trimmed and blanched
- 1 cup frozen peas, blanched
- None None Chopped dill, to serve
- None None FOR THE CREAMY DILL DRESSING
- 1/4 cup mayonnaise
- 1 None lime, peel finely grated and lime juiced
- 1 tbsp horseradish cream
- 1 tbsp chopped dill
- 2 cloves garlic, crushed
- Heat oil in a large skillet on medium heat. Season salmon to taste. Cook 3-4 mins each side, until golden and cooked to desired doneness. Flake into large pieces.
- For the creamy dill dressing, combine all ingredients in a small bowl.
- Gently toss salmon and peas in a large bowl. Drizzle with dressing; toss gently. Serve sprinkled with dill.
