Spicy Honey Glazed Turkey

  1. Preheat the oven to 325u0b0F. Rub the meat with salt, pepper and the ginger. Secure it with toothpicks to retain its shape. Heat the oil in a Dutch oven and brown the meat on all sides. Remove from the pan and set aside.
  2. To make the sauce, add the spring onions and tomato puree to the pan. Stir-fry briefly, then add the stock to deglaze the pan and bring to a boil. Remove from the heat and pour into a baking dish.
  3. Add the meat to the baking dish with the skin facing up out of the sauce. Cook for 15 mins in the oven.
  4. Meanwhile, to make the glaze, mix the chopped chili and honey together. Brush it on the meat and return the dish to the oven for 15 mins, or until cooked through. Transfer the meat to a serving platter, spoon the sauce on top and garnish with the whole chili pepper. Serve with salad and potato wedges, if desired.
