Apricot And Chocolate Granola Bars
- 7 tbsp butter
- 2 tbsp corn syrup
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 3 1/2 cups rolled oats
- 1/2 cup shredded coconut
- 1/2 cup apricots, chopped
- 1/2 cup raisins, chopped
- 3 oz chocolate chips + a handful for sprinkling on top
- Thoroughly grease a swiss roll pan that is approximately 12 x 10 inches. Preheat the oven to 325u0b0F.
- In a medium saucepan, melt the butter and corn syrup, then stir in the brown sugar and vanilla. When the sugar is dissolved remove from the heat.
- Stir in the oats, coconut, chopped apricots, raisins and lastly the chocolate chips. Mix well then turn the mixture into the prepared pan.
- Use wet hands to press the mixture into place then roll firmly with a clean can from your cupboard to compact the mixture and neaten the edges (a can will fit in the pan - a rolling pin won't).
- Sprinkle the remaining chocolate chips on top and bake in the oven for 20 mins. Cool before slicing into bars and serving.
