Thai Style Pork
- 300 g pork fillet
- 4 tbsp soy sauce
- 1 tbsp clear honey
- 2 tbsp sesame oil
- 200 g basmati rice
- 400 g small broccoli florets
- 100 g red lentils, rinsed
- 2 tbsp wok oil
- 1 small onion, chopped
- 2 tbsp sambal oelek
- 3 tbsp roasted cashew nuts
- Trim any excess fat from the pork and cut into thin slices. Put in a bowl, add the soy sauce, honey and sesame oil and mix well. Leave to marinate for 30 minutes.
- Cook the rice in boiling, salted water for 10 minutes. Add the broccoli florets and cook for a further 2-3 minutes until softened. Cook the lentils in a separate pan of water. Drain thoroughly.
- Heat the wok oil in a frying pan and fry the pork for 2 minutes, stirring. Add the onion and fry for a further 5 minutes. Stir in the sambal and cashew nuts. Stir in the rice, broccoli and lentils and mix well. Heat through for 3-4 minutes and serve.
