Mediterranean Pizzas
- 2 tbsp olive oil
- 2 None onions, finely chopped
- 1 lb ground beef
- 2 tbsp tomato puree
- 1 (13.5 oz) can chopped tomatoes
- 1/4 cup pine nuts, toasted
- 1/4 cup fresh mint leaves, chopped, plus extra to garnish
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cumin
- None None flour, for dusting
- 4 None ready-made pizza bases
- None None Greek yogurt, to serve
- Heat oil in a large frying pan over medium heat. Saute onions for 4-5 mins. Increase heat to high and add ground beef. Cook for 6-8 mins, until browned, breaking up lumps. Stir in tomato puree then chopped tomatoes. Simmer for 4-5 mins, until thickened. Remove from heat and stir in pine nuts, mint, vinegar, honey and spices.
- Preheat oven to 400u0b0F. Lightly dust 4 large baking trays with flour. Place a pizza base on each tray. Spread evenly with beef mixture. Bake for 10-15 mins, until dough is crisp and golden. Garnish with mint leaves and serve with a dollop of yogurt.
