Mediterranean Baked Sausages
- 12 None sausage links
- 1 None onion, sliced
- 1 clove garlic, crushed
- 1/2 tsp red pepper flakes
- 1 can (14 oz) diced tomatoes
- 1/2 cup tomato puree
- 1 None zucchini, halved lengthwise and sliced
- 1 tsp brown sugar
- 1/3 cup pitted black olives
- 2 tbsp basil leaves
- None None Mashed potatoes, to serve
- Preheat the oven to 350u0b0F.
- Heat a large skillet on high heat. Cook sausages for 4-5 mins, until golden all over. Transfer to a shallow baking dish.
- Saute onion, garlic and red pepper flakes in same skillet on high heat, for 2-3 mins. Add tomatoes, tomato puree, zucchini and sugar. Season to taste. Bring to a boil. Pour over sausages. Cover with foil.
- Bake for 15 mins until the sausages are cooked through. Top with olives and basil. Serve with mashed potatoes.
