Clams With Tomato Dressing
- 5 1/2 lb clams, scrubbed
- 1/2 cup dry white wine
- 1 None small red onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tbsp white wine vinegar
- 1/2 cup olive oil
- 5 None large tomatoes, coarsely chopped
- 4 None spring onions, thinly sliced
- 2 tbsp coarsely chopped fresh cilantro
- Rinse clams under cold running water then drain. Transfer to a large saucepan along with wine. Cover and bring to a boil. Reduce heat and simmer for 5 mins, or until shells open (discard any clams that do not open). Drain clams, discarding liquid.
- Meanwhile, lightly oil a large saucepan and place over medium heat. Cook red onion and garlic until lightly browned. Add lemon juice, vinegar and oil. Cook, stirring, for 2 mins, or until slightly thickened.
- Gently toss clams with tomatoes, onions, cilantro and red onion mixture. Serve immediately.
