Italian Sausage Calzones

  1. Preheat oven to hot, 400u0b0F. Line two baking sheets with parchment.
  2. Heat oil in a large skillet on high. Saute onion and garlic 2-3 minutes.
  3. Add sausage; saute an additional 4-5 minutes, until golden. Stir in tomato and basil; cook a further 2 minutes. Season to taste.
  4. Place one sheet of pie dough on a clean surface. Cut into a round shape by trimming corners.
  5. Spoon one-quarter sausage mixture into center of pastry. Top with one-quarter mozzarella. Brush edges with egg.
  6. Fold over into a semicircle, pressing edges together with a fork to seal. Transfer to tray. Repeat with remaining pastry and filling.
  7. Brush calzones with remaining egg. Bake 15-20 minutes, until golden brown.
