Caesar Salad Bites With Figs
- 8 thin slices sourdough bread
- 1 oz Parmesan cheese, freshly grated + extra, to serve
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tbsp sour cream
- 2 tsp capers, chopped
- 1 None anchovy, chopped
- 1 clove garlic, minced
- 1 drop hot pepper sauce
- 2 heads baby romaine lettuce, 4 outer leaves shredded, remainder separated
- 12 thin slices smoked chicken, chopped
- 6 None figs, quartered
- Preheat oven to 350u0b0F. Line a baking tray with foil. Arrange bread on tray and sprinkle with Parmesan. Bake for 4-5 mins, or until golden. Let cool then break into bite-size pieces.
- Meanwhile, to make the dressing, combine mayonnaise, lemon juice, sour cream, capers, anchovy, garlic and hot sauce.
- Combine shredded lettuce with chicken, figs, dressing and sourdough crisps. Arrange on remaining lettuce leaves. Top with extra cheese, to serve.
